TASTING NOTES

Appearance: Deep garnet-purple.

Aroma: This 2021 Insignia opens with inviting aromatics of violet, dark fruit, tobacco, subtle baking spice and earthy dried herbs.

Taste: The palate is juicy and dense with expressive layers of blackberry, raspberry, blackcurrant and dark chocolate.

FOOD PAIRINGS

Insignia's depth and structure pair well with grilled beef fillet, beef short rib and rack of lamb accompanied by seasonal vegetables and a potato purée. It also goes well with flank steak with chimichurri sauce, pan-seared ribeye steak and grilled portobello mushrooms.
